In order from lowest to highest the hand rankings in Texas Hold'em poker are as follows. High card, pair, two pair, three of a kind, straight, flush, full house, four of a kind, straight flush, and then finally royal flush. In Texas Hold'em, part of the reason why you need to be so familiar with the ranking of hands is because of the community cards. By seeing five of the cards available to all players, you can then judge what the top possible hand is. Also, by seeing how players react to subsequent community cards--for example, if they bet, check, check raise, etc.--you can then make a decision about the strength of your own hand.
Being familiar with hand ranking can also let you know if you are "drawing dead." Drawing dead simply means that there is no card that can show up that will give you a winning hand. For example, if you have a pair of aces but four hearts show up on the board--and there are three other players in the pot--you can almost guarantee that someone has that fifth heart.
